Curry Chicken Noodle Soup
Got sickness? This is my favorite go-to medicine soup when I’m feeling under the weather, needing a digestive boost, or simply looking for something nourishing and delicious for meal prep. This soup is packed with medicinal kitchen staples that are as healing as they are tasty! Let me break it down for you..
Onions: These humble kitchen heroes are full of quercetin, a potent antioxidant that supports immune function. When cooked, onions release even more quercetin, helping to reduce inflammation and fight infection.
Ginger: A powerhouse of anti-inflammatory properties, ginger soothes an upset stomach and supports digestion. It also has immune-boosting benefits and can help clear congestion, making it perfect for when you're feeling run down.
Turmeric: Known for its vibrant yellow color, turmeric is a natural anti-inflammatory and antioxidant. Curcumin, its active compound, helps support joint health, fight infections, and boost overall immunity.
Garlic: A true superfood, garlic is packed with sulfur compounds that help fight bacteria and viruses. It also promotes heart health, reduces inflammation, and can help strengthen the immune system.
Chicken: Packed with protein, chicken helps build and repair tissues, while the rich broth provides hydration and comfort. It's perfect for boosting energy and providing the nutrients needed for healing.

It’s also known for its immune-boosting properties, helping to detoxify the body and fight infections. Also having an acidic component in your curry really takes it to the next level. Go ahead, add a little more on top in your bowl, its good for you!

Whether you're fighting off a cold, looking for digestive support, or just craving something cozy and nourishing, this soup has all the healing ingredients you need to feel better fast! You’ll be making it over and over.
Recipe:
One Medium Onion
4 Carrots
6-8 Cloves Garlic
3 inches Ginger
4 Chicken thighs
4 cups Chicken Broth
One can Coconut Milk
6 Leaves Kale
2 tbs Curry Powder
2 tbs Turmeric
½ tsp Black Pepper
2 tbs Apple Cider Vinegar
1 tbs Toasted Sesame Oil
Optional addition: Midnight Gomasio & Chili Flakes
Instructions:
Step 1: Prep the Veggies
Start by chopping your onions, garlic, ginger, and any other veggies you're using.
Step 2: Sauté the Aromatics
Heat bit of oil or ghee in your in your pot and add your aromatic/veggies one buy one sauteing in between each addition. Start with onion until translucent and fragrant, then carrots, then ginger, then garlic.
Step 3: Add the Spices
This is where the curry magic happens! Add your turmeric and any other spices you like (cumin, coriander, etc.). Let them toast in the pan for a minute to bring out their flavor and medicinal benefits. The turmeric will give your soup a lovely golden hue and anti-inflammatory properties.
Step 4: Add the Chicken and Broth
Now it’s time to add your chicken. Whether you’re using bone-in pieces for a richer broth or boneless chicken. Nestle them on top of the veggies and pour in your broth (chicken or vegetable) and let it simmer. You want the flavors to meld and the chicken to become tender. Pull out your chicken and let it rest before shredding it.
Step 5: Coconut Milk & ACV
Add in Coconut milk & Apple Cider Vinegar. Bring to a simmer before adding in your shredded chicken, kale, and rice noodles. Let these all simmer together with a lid on for another 5 minutes and we’re done!
Step 6: The Finishing Touches
Before serving, Taste and adjust the seasoning, adding salt or a little extra spice if needed. Pour Toasted Sesame oil over the top and extra ACV if you’re feeling feisty. Here I would top with Gomasio, Chili’s, Sesame Seeds, or Cilantro. Enjoy!!
